On the counter

  • 2–4 shots espresso; optional Nespresso maple coffee pod
  • About ¾ cup milk total: oat milk, fairlife lactose-free dairy milk, or a blend
  • 1 tsp mocha syrup + 1 tsp maple syrup
  • 1 tbsp real marshmallow fluff
  • 2 tbsp cold dairy heavy cream
  • Ice + a tiny sprinkle of salt
  1. Your favorite cup.
    Brew the espresso. Stir in the mocha and maple syrups while it’s warm.
  2. Build the layers.
    Add ice and milk to your cup, leaving room for the coffee and cloud. Pour in the espresso.
  3. Whip the cloud.
    Whip real marshmallow fluff with cold heavy cream until soft and spoonable.
  4. Sprinkle. Sip.
    Spoon the cloud on top and finish with a tiny sprinkle of salt. I meant to sip. I gulped.

Suggested starting amounts for milk, fluff and cream; adjust to your cup. Both marshmallow recipes use real marshmallow fluff. Omit maple for the mocha version. For hot coffee, skip the ice and warm the milk. A lighter option: froth oat milk with fluff and omit cream.
